Speaking of Druids, I could not resist the temptation to start a second run, with a Feyspeaker. It'll be nice to learn about druidic magic this way. But I'll also play on with Gerrit the Thassilonian.
Regarding min-maxing I understand you @Serg_BlackStrider and @mlnevese. It's how I feel about multi-classing in ways that make no sense to me in the story. I hope to (permanently) bump Gerrit's Wisdom along the way, and then I'll be ok with his stat spread.

I have a Cleric/Ranger in a similar position (no LoB though, like your Monk). Anomen, Jaheira and Mazzy all abandoned her in the final battle, which I attributed to a bug. I later realized that my Cleric/Ranger had given some of the evil answers in her conversations with the Solar in the Pocket...
You can also just equip the off-hand weapon after having cast the touch spell or the magically created weapon. Amity walks around with a shield, and puts her main weapon in the off-hand after she's cast Seeking Sword. It works the same with the necromantic touch spells.
Very nice! That's actually part of the fun I can have with my priestess of Helm Amity. Like those touch spells, her Seeking Sword can be paired with an off-hand weapon without any penalties. So that's 4 APR (5 with Haste or Righteous Wrath, 8 with Improved Haste), awesome for a single-class...
